Chipotle Chicken Enchilada Casserole

INGREDIENTS
1 tablespoon olive oil
1 medium onion (chopped)
1 jalapeno pepper (chopped)
1.5 pounds chicken thighs (chicken breast is good, too)
2 cloves garlic (chopped)
16 ounce can tomato sauce
1 7 ounce can chipotles in adobo sauce
1 tablespoon chili powder
1 teaspoon Mexican oregano
½ teaspoon cumin
Salt and pepper to taste
10 street corn tortillas (or use 6 corn tortillas)
2 cups shredded Monterrey Jack cheese
FOR GARNISH: Fresh chopped cilantro (chopped green onion, queso fresco, spicy chili flakes, hot sauce)
