2 Tablespoons Challenge Dairy Butter
½ yellow onion, diced
½ pound ground beef
½ pound ground pork
1 Tablespoon ancho chile powder
½ Tablespoon mexican oregano
¼ teaspoon cayenne
1 teaspoon dried thyme
8 ounces tomato sauce
1 chipotle pepper, chopped
1 Tablespoon of adobo sauce
1-2 cups grated mozzarella or Mexican-blend cheese
