Chinese Lo Mein – Made Easy

INGREDIENTS
4 tsp soy sauce
1 Tbsp brown sugar (packed)
1 tsp corn starch
1/4 tsp baking soda
12 ounces Chinese egg noodles (thin dried; or spaghetti noodles)
1 ½ Tablespoons sesame oil
1/2 pound boneless pork chops (other substitutes: chicken, or boneless country-style pork ribs)
1 1/2 tsp fresh ginger (minced or grated)
3 green scallions ( sliced into two-inch lengths (I sliced mine thinner and separated the white ends from the green))
2 stalks celery (sliced thin; optional)
1 1/2 tsp garlic (minced)
5 shiitake mushrooms, thinly sliced (optional)
1 Tbsp vegetable oil (or peanut oil)
3 Tbsp low-sodium soy sauce
1 1/2 Tbsp oyster sauce
1 1/2 Tbsp dry sherry (or Chinese rice wine)
1 1/2 tsp honey
