2 cloves garlic (use one for a less pungent flavor)

1 shallot, rough chopped

1 cup packed parsley leaves, be sure to remove most of the stems and rinse well

2 Tbsp fresh oregano leaves
•
2 Tbsp fresh basil leaves
•
1/2 cup olive oil
•
juice of 1/2 large lime (or 1 small)
•
1 Tbsp sherry vinegar
•
1/2 tsp red chili flakes
•
fresh cracked pepper to taste
