Ingredients

  • 2 Tbs. cornstarch
  • 1/2 C. sugar
  • 2 1/2 C. water
  • 2 C. blueberries
  • One 3-inch cinnamon stick
  • 1 can (6 oz.) frozen orange-juice concentrate
  • Lemon slices or sour cream

How To Make chilled blueberry and orange soup

  • Step 1
    In saucepan mix cornstarch, sugar and water. Bring to boil over medium heat, stirring. Simmer until thickened and smooth, about 2 minutes. Add blueberries and cinnamon; bring to brief boil. Remove from heat. Add orange juice; stir until thawed. Cover and chill. Serve in bowls with lemon or dab of sour cream.
