- 2 Tbs. cornstarch
- 1/2 C. sugar
- 2 1/2 C. water
- 2 C. blueberries
- One 3-inch cinnamon stick
- 1 can (6 oz.) frozen orange-juice concentrate
- Lemon slices or sour cream
How To Make chilled blueberry and orange soup

Step 1In saucepan mix cornstarch, sugar and water. Bring to boil over medium heat, stirring. Simmer until thickened and smooth, about 2 minutes. Add blueberries and cinnamon; bring to brief boil. Remove from heat. Add orange juice; stir until thawed. Cover and chill. Serve in bowls with lemon or dab of sour cream.
