INGREDIENTS
6 to 7 ounces macaroni, about 1 1/2 cups, uncooked
2 tablespoons olive oil
1 to 1 1/2 pounds ground beef
1 large onion, chopped
1/2 cup chopped green bell pepper
3 medium cloves garlic, minced
2 cans (14.5 ounces each) diced tomatoes with liquid
1 can (6 ounces) tomato paste
1/2 cup water
1 tablespoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1/4 teaspoon freshly ground black pepper
1 cup corn kernels, canned or frozen
1 can (15 ounces) black beans, drained, rinsed
8 ounces shredded Cheddar cheese
salt, to taste
finely chopped cilantro and more shredded cheese, if desired, for garnish
