INGREDIENTS
1 pound dried chickpeas, picked over and rinsed
1 medium-size onion, chopped
2 teaspoons dried oregano
3 small zucchini (6 ounces each), cut into 3/4-inch pieces
1 can (14.5 ounces) diced tomatoes with Basil, Garlic and Oregano
1/2 cup vegetable broth
1 teaspoon salt
1/2 teaspoon black pepper
1 box (7.6 ounces) whole-wheat couscous, cooked according to package directions
1 cup crumbled feta (optional)
