chicken with oyster mushrooms

This recipe is for leftover chicken or tur­key meat. Any part of the cooked carcass can be used, white or dark meat. It is very quick and satisfying.

Ingredients

  • 1/2 C. heavy cream
  • 1/2 C. chicken stock
  • 1Tbs. cream sherry
  • 1tsp. fresh, crushed garlic
  • 1Tbs. prosciutto (or your favorite ham), finely chopped
  • 1Tbs. onion, finely chopped
  • 12 oz. cooked chicken or turkey meat, cut into 2-in. strips
  • 8 oz. fresh oyster mushrooms, sliced into 2-in. strips
  • salt and pepper to taste
  • 2 Tbs. cornstarch mixed with 1/3 C. water

How To Make chicken with oyster mushrooms

  • Step 1
    Combine all ingredients except cornstarch in a heavy skillet. (You may want to delay salting until the dish is slightly heated.) Heat over a medium flame until simmering, then continue simmering over low flame for 5 minutes. Thicken with cornstarch and water mixture, then season with salt as necessary. Serve immediately.
