chicken with oyster mushrooms
This recipe is for leftover chicken or turkey meat. Any part of the cooked carcass can be used, white or dark meat. It is very quick and satisfying.

Ingredients
- 1/2 C. heavy cream
- 1/2 C. chicken stock
- 1Tbs. cream sherry
- 1tsp. fresh, crushed garlic
- 1Tbs. prosciutto (or your favorite ham), finely chopped
- 1Tbs. onion, finely chopped
- 12 oz. cooked chicken or turkey meat, cut into 2-in. strips
- 8 oz. fresh oyster mushrooms, sliced into 2-in. strips
- salt and pepper to taste
- 2 Tbs. cornstarch mixed with 1/3 C. water
How To Make chicken with oyster mushrooms

Step 1Combine all ingredients except cornstarch in a heavy skillet. (You may want to delay salting until the dish is slightly heated.) Heat over a medium flame until simmering, then continue simmering over low flame for 5 minutes. Thicken with cornstarch and water mixture, then season with salt as necessary. Serve immediately.
