2 tbsp olive oil

1 onion, chopped
2 oz (60g) pancetta, chopped
3 cloves garlic, minced
1 tbsp fresh rosemary, chopped
1/2 cup dry sherry
1 1/2 cup chicken broth
1 tbsp all purpose flour
1 cup frozen artichoke hearts, thawed and chopped, or artichokes marinated in oil
salt and pepper to taste
