1/4 cup dry sherry

3 tbsp. butter

1 tsp. fresh thyme leaves
•
2 tbsp. Dijon mustard
•
1 egg + 1 tsp. water for eggwash
•
1 tsp. olive oil
•
salt to taste
•
fresh pepper to taste
