"Chicken pieces soaked in a flavorful thai marinade then they're threaded onto skewers and grilled, and to finish them off they are paired with a rich and satisfying homemade peanut sauce. I like to cut the chicken into cubes for this recipe but if you want to keep it more traditional you can do strips instead...."

INGREDIENTS
1/3 cup coconut milk ((well stirred))
2 Tbsp soy sauce
2 Tbsp fresh lime juice
1 Tbsp fish sauce
1 Tbsp packed brown sugar
1 Tbsp peeled and minced ginger
2 tsp minced garlic
1 tsp ground coriander
1 tsp ground cumin
3/4 tsp turmeric
2 lbs boneless, skinless chicken breasts, (cut into 1 1/4-inch cubes)
Cilantro, (for serving)
1/2 cup creamy peanut butter
2 Tbsp packed brown sugar
2 Tbsp fresh lime juice
1 1/2 Tbsp soy sauce
1 tsp minced garlic
1/4 cup coconut milk
2 tsp sriracha
2 Tbsp hot water, (then more as needed)
