3 bone-in, skin-on chicken breasts (about 3 lbs)
1 tablespoon extra-virgin olive oil
Salt and freshly ground black pepper
1/2 cup mayonnaise, best quality such as Hellmann's or Duke's
1/2 cup sour cream
2-1/2 tablespoons fresh lemon juice, from 1 lemon
1 teaspoon Dijon mustard
1 tablespoon sugar
3 stalks celery, finely diced
4 large scallions, light and dark green parts, thinly sliced
1-1/2 cups grapes, halved
1 cup sliced almonds
2 tablespoons fresh chopped flat-leaf parsley
1 tablespoon fresh chopped dill
