2 lbs. boneless skinless chicken thighs, cut into bite-sized pieces (about 8 thighs) ((or sub with chicken breasts))
3 carrots, (peeled and cut into ½-inch pieces)
2 celery stalks, (diced)
1 medium onion, (diced)
3 cloves garlic, (minced (about 1 tablespoon total))
2 tablespoons all-purpose flour
1 bay leaf
1 teaspoon Italian seasoning
½ teaspoon dried basil
½ teaspoon dried oregano
½ teaspoon dried thyme
4 cups chicken broth
1 ½ lbs. Yukon gold potatoes or red potatoes (about 4 large), (diced into 1-inch cubes)
½ cup heavy cream or half-and-half, (at room temperature)
Kosher salt and ground black pepper, (to taste)
3 tablespoons chopped fresh parsley
Fresh lemon juice, (to taste)
Optional garnish: additional chopped fresh parsley or other herbs
