Chicken Pot Pie with Biscuits - Cooking Classy

INGREDIENTS
1 1/2 cups chopped yellow onion ((1 medium))
4 Tbsp unsalted butter
1/4 cup all-purpose flour
2 1/3 cups low-sodium chicken broth*
1 cup half and half
3/4 tsp dried thyme, (or 2 tsp minced fresh)
3/4 tsp dried rosemary, (or 2 tsp minced fresh)
Salt (and freshly ground black pepper)
12 oz. frozen mixed vegetables
3 cups cooked shredded rotisserie chicken ((breast and thigh meat))
1 1/2 cups (7.5 oz) unbleached all-purpose flour ((scoop and level to measure))
2 tsp baking powder ((preferably aluminum free))
1/4 tsp baking soda
1/2 tsp salt
6 Tbsp unsalted butter, (cut into 6 pieces)
3/4 cup + 1 Tbsp buttermilk, (well chilled)
1 Tbsp minced fresh parsley
