INGREDIENTS

1 medium yellow onion, chopped

3 carrots, cut into small rounds about 1/4 inch thick

2 ribs celery, chopped into 1/4” pieces
•
2 cloves garlic, minced
•
1 tablespoon olive oil (*oil not needed for slow cooker instructions)
•
2 boneless skinless chicken breasts
•
1 bay leaf
•
8 cups chicken broth (homemade or store bought, your choice. If I buy it from the store I like to buy the low sodium variety)
•
1 teaspoon dried parsley or 1 tablespoon fresh chopped parsley
•
1 teaspoon dried oregano
•
1 teaspoon dried basil
•
1/4 teaspoon dried thyme
•
1/2 teaspoon ground black pepper
•
1 teaspoon salt (more or less to taste)
•
3 cups uncooked wide egg noodles
