2 chicken breasts (boneless, skinless)

3 tablespoons vegetable oil (divided)
8 ounces dry linguine (cooked and drained)
5 cups stir fry veggies (I used a mix of broccoli, mushrooms, baby carrots, and sugar snap peas)
6 ounces water chestnuts (drained)
1/4 cup soy sauce
1/3 cup apricot jam
2 cloves garlic (minced)
2 tablespoons brown sugar
1 teaspoon sesame oil
1/2 teaspoon white vinegar
1 teaspoon corn starch
