1/8 teaspoon ground ginger
4 boneless skinless chicken thighs ((5 ounces each) - see note below to use chicken breasts)
1/2 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
1 large egg
1/2 tablespoon vegetable oil
1/4 cup all-purpose flour
1 1/3 cup panko Japanese breadcrumbs
