1 teaspoon minced ginger
½ teaspoon kosher salt
¼ teaspoon white pepper (or black pepper)
3 tablespoons vegetable oil (divided)
¼ cup minced white onion
1 tablespoon minced garlic
½ cup diced carrots (¼-inch dice)
2 large eggs (whisked)
½ cup peas (frozen, defrosted)
2 tablespoons green onions (thinly sliced)
