1 1/2 cups buttermilk ((see note for making your own buttermilk))
2 1/4 cups all-purpose flour (separated)
1/2 cup cornstarch
2 cups lard ((or shortening, peanut oil, or vegetable oil))
1 stick unsalted butter* ((or 1/2 cup ghee))
4 cups whole milk (at room temperature)
salt (to taste)
black pepper (to taste)
4 cups prepared mashed potatoes
