INGREDIENTS
2 tablespoons olive oil
8 chicken thighs (skin on, bone-in )
1/2 cup flour
1/2 teaspoon garlic powder
1/2 teaspoon each salt and pepper
2 tablespoons butter
1 cup white onion (diced)
2-3 large carrots (peeled then cut on the bias)
1 pound mushrooms (sliced)
2 tablespoons minced garlic
2 tablespoons all-purpose flour
1/2 cup white wine
1 1/2 cups chicken broth
1/2 cup heavy cream
2 teaspoons fresh minced thyme leaves (not the stems!)
