1 cup chicken broth (low or no sodium)
2 cloves garlic (smashed)
1 quarter white onion
1 bayleaf
⅓ cup canola oil
12-15 white corn tortillas
3 cups Monterey Jack Cheese (shredded (divided))
2 cups enchilada sauce (homemade sauce recipe here)
sour cream
avocado
shredded lettuce
tomato
cilantro
