Chicken Enchilada Soup
"Corn tortillas thicken this delicious soup that tastes just like baked enchiladas. Top with cheddar cheese, tortilla strips and chopped cilantro. You may want to also add chopped avocado, sour cream or sliced black olives, what ever you like...."
INGREDIENTS

4 chicken breast, boneless and skinless,

1 large yellow onion, diced
•
2 cloves garlic, minced
•
2 quart chicken broth
•
1 cup enchilada sauce, (I used hot green enchilada sauce)
•
1 (14.5 ounce) can diced tomatoes, undrained
•
1 teaspoon salt
•
1 teaspoon chili powder
•
1/2 teaspoon ground cumin
•
16 corn tortillas, divided
•
2 cups medium cheddar cheese, shredded
•
cilantro, chopped
•
2 limes
