"Your favorite Mexican chicken enchiladas turned into a delicious pizza!..."
INGREDIENTS

1 pound pizza dough

1/3 cup green enchilada sauce (I used this)

1 chicken breast, diced or sliced and tossed in enchilada sauce mixture (see below)

1 green onion, thinly sliced
•
1/2 cup black beans, rinsed and drained
•
1/2 cup fresh or frozen corn, defrosted if using frozen
•
1/4 cup black olives, sliced
•
1 cup Monterey jack cheese
•
1/2 cup cheddar cheese
•
cilantro for topping
•
1 large cooked chicken breast, diced or cut into thin strips
•
1/4 cup green enchilada sauce
•
1/2 t. chili powder
•
1/4 t. cumin
•
1/4 cup plain non fat Greek yogurt
•
2 T. green enchilada sauce
•
1/4 t. chili powder
