8 chicken thighs, skin on, bone in
2 large onions, finely sliced
5 garlic cloves, chopped
5cm/2in piece root ginger, chopped
1 large red pepper, chopped
2 tbsp tomato purée
3 tbsp mild curry paste
1 tbsp garam masala
1 tbsp dry fenugreek leaves
1 tbsp ground coriander
¼ root turmeric, finely grated
1 fresh red chilli, finely sliced
½ bunch fresh coriander
1 tbsp vegetable oil
½ tsp cumin seeds
3 cardamom pods
1 cinnamon sticks
½ tsp ground black pepper
1 bay leaf
500g/1lb 2oz basmati rice, rinsed and drained
1 tsp salt
50g/1¾oz unsalted butter
