INGREDIENTS
12 small flour tortillas
3 cups cooked shredded chicken
¾ teaspoons salt
¼ to ½ teaspoon pepper
1 cup shredded Mexican cheese
1 cup frozen corn
10 ounce can green chili enchilada sauce + Plus 1 cup green chili enchilada sauce for dipping the tortillas
3 Tablespoons oil
½ cup finely diced onion
¼ cup finely diced jalapeno (seeded)
2 cups heavy cream
2 cups Monterey Jack cheese, grated Plus ¾ cup for the top of the enchiladas
8 slices American white cheese
2 Tablespoons cilantro, chopped
