1/4 cup olive oil

3/4 pound cremini mushrooms, sliced

2 ribs celery with leafy tops, chopped
•
4 cloves garlic, grated or chopped
•
4 large shallots or 1 onion, chopped

2 tablespoons chopped thyme

Salt and pepper

1/2 cup dry sherry or Marsala
