Cherry Whiskey Caramel Ice Cream

For the cherries:

1.5 cups pitted and halved cherries (220g)

2 Tbs whiskey (30ml)
•
1/3 cup sugar (80g)
•
1/4 cup water (60ml)
•
For the salted caramel sauce:
•
6 Tbs unsalted butter (85g)
•
3/4 cup sugar (150g)
•
1 cup heavy cream (250ml)
•
1/2 tsp pure vanilla extract
•
1.25 tsp flaky sea salt (or Diamond Crystal Kosher Salt)
•
For the ice cream base:
•
2 cups heavy cream (500ml)
•
1 cup whole milk (250ml)
•
3/4 cup sugar (150g)
•
a pinch of salt
•
4 large egg yolks
•
1.5 tsp pure almond extract
•
1 tsp pure vanilla extract
