Cherry Ricotta Tart

INGREDIENTS
Serves 10-12
1 pound ricotta cheese
1 large egg yolk
1 T. heavy cream
1/4 C. Sugar in the Raw or coarse sanding sugar
3/4 C. sliced, blanched almonds
1 1/2 lbs. ripe cherries, pitted and halved
1/4 C. sugar
lemon zest from 1lemon
Pastry Crust:
11 T. cold unsalted butter, cut into small pieces (or vegetable shortening for a vegan opt.)
1 2/3 C. all purpose flour
3/4 tsp. salt
1/4- 1/3 cup. ice water
