1 1/2 lbs. ripe cherries, pitted and halved

1/4 C. sugar
•
lemon zest from 1lemon

Pastry Crust:
•
11 T. cold unsalted butter, cut into small pieces (or vegetable shortening for a vegan opt.)
•
1 2/3 C. all purpose flour
•
3/4 tsp. salt
•
1/4- 1/3 cup. ice water
