Lemon zest & juice from 1 lemon (about 2 teaspoons of each)

FOR THE CRUMBLE TOPPING

Unsalted COLD Butter 12 Tablespoons (170g)
•
Light Brown Sugar 1/3 cup (70g)
•
Granulated Sugar 1/2 cup (100g)
•
Cinnamon 1/2 teaspoon
•
Salt 1/4 teaspoon
•
Cake Flour (*or All Purpose if you do not have cake flour) 1 1/2 cup + 2 Tablespoons (202g)
