INGREDIENTS
2 Tbsp olive oil + 2 Tbsp unsalted butter
1 med onion, finely diced (about 1 cup)
1 cup ham, finely diced (about 3 oz)
2 cups medium grain rice such as Jasmine rice (un-rinsed)
1 cup dry white wine such as Chardonnay
5 cups hot reduced sodium chicken broth/stock
1 tsp salt (we used sea salt)
1 cup frozen peas, thawed
1/3 cup fresh Italian parsley, finely chopped
1 cup shredded parmesan cheese
4 oz mozzarella cheese, cut into 24 (1/2-inch) cubes
1 cup all-purpose flour
3 large eggs, beaten with a fork
1 1/2 cups dry Italian Bread crumbs
Oil for frying (vegetable, canola, or grapeseed oil)
