6 medium russet potatoes

1/4 cup butter

2 egg yolks, save the egg whites
•
1/2 cup milk
•
2 teaspoons onion, chopped very fine

salt and pepper, to taste

3 ounces mild cheddar cheese, cut into small cubes about 3/4 inch

4 ounces saltine crackers, 1 package crushed fine
•
3 beaten egg whites, use egg whites from above plus one more egg white
•
vegetable oil for frying for 15 seconds
