Cheesy Ham and Potato Soup

1-2 tablespoons cornstarch (optional)
2 ½ cups cheddar cheese
1 teaspoon onion powder
¼ teaspoon ground sage
2 sprigs thyme
1 bay leaf
Salt/Pepper (to taste)
5 strips Bacon (cooked and crumbed)
Green onions (diced)
Fresh Parsley (roughly chopped)
