2 boneless, skinless chicken breasts cut into small 1-inch pieces

1 small white onion, minced (or 1 shallot, minced)
5 cloves garlic, minced
1 tsp. fresh thyme
1 1/2 cups arborio
6 cups chicken stock or broth, unsalted (or water*)
1 cup shredded sharp cheddar cheese
