Cheesecake Layered Carrot Cake Recipe

INGREDIENTS
2 cups  all-purpose flour
2  teaspoons baking soda
2  teaspoons ground cinnamon
½ teaspoon salt
3 large eggs ( at room temperature)
2 cups granulated sugar
¾ cups  vegetable oil
¾ cup buttermilk
2 teaspoons  vanilla extract
2 cups carrots (grated finely, about 3 large carrots)
8 ounces pineapple (crushed and drained)
3 and ½ ounces coconut (sweetened, flaked)
1 cup pecans (chopped & lightly toasted, or walnuts)
16 ounces cream cheese ( at room temperature)
½ cup unsalted butter ( at room temperature)
4 to 5 cups powdered sugar (sfted then measured)
2  teaspoons  vanilla extract
additional chopped pecans for decorating ( if desired, or walnuts)
