For the Egg Rolls:

1 package Egg Roll Wrappers
•
1 (15 oz) can Black Beans, drained and rinsed
•
1 cup corn
•
1 green bell pepper, diced
•
2 medium tomatoes, diced
•
1 small onion, diced
•
3 chicken Breasts, cooked and shredded
•
1/2 tsp cumin
•
1 tsp garlic powder
•
1 tsp chili powder
•
1/2 cup shredded cheese (optional)
•
2-3 Tbsp Oil for light frying*
•
For the Creamy Cilantro Dipping Sauce:
•
6 oz. cream cheese
•
1/4 cup sour cream
•
1 large bunch cilantro
•
2 Tbs salsa (optional- I use it to thin the sauce if necessary)
