2 cups (425g) ricotta cheese

1 teaspoon King Arthur Pure Vanilla Extract
1 teaspoon lemon zest (grated rind) or 1/8 teaspoon lemon oil
2 tablespoons (25g) granulated sugar
1/2 cup (99g) granulated sugar
2 tablespoons (7g) Instant ClearJel or 1 tablespoon (11g) cornstarch
1 cup raspberries or blueberries fresh or frozen
1/4 cup (57g) water or blueberry juice
