Cheese Blintz with Strawberry Sauce - G'day Soufflé

INGREDIENTS
For the batter:
3 large eggs
1 cup all-purpose flour
1 cup milk
1/4 cup cold water
2 tablespoons vegetable oil
1 tablespoon white sugar
1/2 teaspoon salt
1/4 teaspoon vanilla extract
For the Filling:
1 1/2 cups ricotta cheese, strained if wet
1/2 cup cream cheese
1 lemon, zested
1 large egg
2 tablespoons confectioners (icing) sugar
1 pinch salt
1 tablespoon butter, or as needed
1 confectioners (icing) sugar for dusting
For the Strawberry Sauce:
1 1/2 cups fresh strawberries, diced
1/4 cup white sugar
'splash' water
2 tbsp corn flour or corn starch to thicken
2 tbsp water
