"Mexican style simmered beans with chorizo sausage and bacon!..."

INGREDIENTS
1 pound dried pinto beans, picked over and soaked overnight
8 ounces bacon, cut into 1/2 inch slices
8 ounces chorizo (link), casings removed
1 cup onion, diced
1 jalapeno, diced
3 cloves garlic, chopped
1 teaspoon ground cumin
6 cup water (or chicken broth (link))
1 (15 ounce) can (fire roasted) diced tomatoes
1 tablespoon apple cider vinegar (optional)
salt and pepper to taste
2 tablespoons cilantro, chopped
