angel hash salad

This was my Mom's recipe, she was always asked to bring this to family meals. The recipe card is very well worn, so you know it was used quite often. This recipe brings back such warm childhood memories for me. I have also added mandarin oranges to this and adapted the recipe for the microwave.

Ingredients

  • 2 teaspoons cornstarch
  • 2 tablespoons sugar
  • 1/2 cup pineapple juice
  • 1 large egg yolk
  • 1/2 cup whipping cream, whipped
  • 2 - bananas
  • 1 cup pineapple tidbits, drained
  • 1 cup mandarin oranges, drained
  • 1 cup marshmallows, mini
  • 1/4 cup nuts, if desired

How To Make angel hash salad

  • Step 1
    In a microwave safe bowl, combine the cornstarch, sugar, pineapple juice and beaten egg yolk, whisk. Cook until clear, about 1 1/2 -2 minutes, stirring every 30 seconds. Cover and cool the mixture by using an ice bath( ice bath:place ice in a larger bowl and place the bowl of cooked mixture on the ice)
  • Step 2
    Whip the whipping cream, add the cooled mixture, mix well.
  • Step 3
    Put the cream mixture in a nice serving bowl, add the pineapple, mandarin oranges, marshmallows and nuts if desired,stir. Chill until you are ready to serve and then slice the bananas into the salad just before serving.
