Rhubarb pies are such a childhood memory! This was adapted from my Mom's Rhubarb Pie recipe.

Ingredients
- CRUST
- 1/2 cup butter
- 1 cup flour
- 1/4 cup confectioners' sugar
- FILLING
- 2 large eggs
- 1 cup sugar
- 3 cups rhubarb
How To Make rhubarb dream dessert

Step 1Mix together the butter, flour, and powdered sugar and then pat into an 8 x 8" pan, bake at 350 for 10 minutes.

Step 2While the crust is baking, wash and cut up the rhubarb into 1/2" pieces. In a bowl, mix the eggs and sugar together, add rhubarb. Pour onto baked crust and bake an additional 30-40 minutes until lightly brown. Best if served warm with ice cream or whipped cream.
