2 Hard-boiled Eggs (cooled, peeled, and chopped)
1/4 cup Red Onion (finely chopped)
1/2 cup Celery Stalks (chopped, about 3 stalks)
1/3 cup Dill Pickle (finely cubed)
1 tablespoon Apple Cider Vinegar
1/2 cup Plain Greek Yogurt (or Sour Cream)
1/4 cup Mayonnaise (I used avocado oil mayonnaise)
1 tablespoon Yellow Mustard
1/4 cup Fresh Parsley (or chives, finely chopped)
