1/2 to 1 teaspoon ground cumin, or to taste
1/2 tablespoon smoked paprika
Salt and pepper
2 tablespoons olive oil (plus extra for roasting)
1 Spanish onion, chopped
4 large garlic cloves, minced
1/2 teaspoon red pepper flakes
8 cups chicken stock
1/2 pound smoked turkey kielbasa, sliced (Wellshire Farms brand is particularly good)
1 bunch mustard greens, shredded
