INGREDIENTS
¾ cup fresh orange juice (from about 3 oranges)
Zest of 1 orange
2 tablespoons honey
1 fresh thyme sprig
6 medium carrots, peeled and finely chopped into ?-inch cubes
1 tablespoon extra-virgin olive oil
6 pitted oil-cured black olives, very finely chopped
1 tablespoon pickled ginger, very finely chopped
½ tart green apple (such as Granny Smith), cored, peeled and chopped into ?-inch cubes
1 small shallot, very finely chopped
1 tablespoon finely chopped fresh tarragon leaves
⅓ cup mascarpone cheese
