Carrot Soup - Cooking Classy

INGREDIENTS
2 Tbsp olive oil
2 lbs carrots, (peeled and chopped (5 1/2 cups))
1 1/2 cups chopped yellow onion ((1 medium))
3/4 cup chopped celery ((2 ribs))
1 Tbsp peeled and chopped fresh ginger
2 tsp minced garilc ((2 cloves))
1 tsp paprika
1/2 tsp ground cumin
1/8 tsp ground nutmeg
1/8 tsp cayenne pepper
6 to 7 cups vegetable broth
Salt (and black pepper)
1/2 cup canned coconut milk (or half and half)
1 Tbsp honey (or maple syrup)
2 tsp fresh lemon juice
Minced parsley, (for garnish (optional))
