3 1/4 cups all-purpose flour

2 cups finely grated carrots (6-8 carrots, depends on their size)
1/2 cup applesauce
2 cups brown sugar
3 eggs
3/4 cup buttermilk
2 teaspoons vanilla
Spiced Creamcheese Frosting
1 cup (2 sticks) butter at room temperature
12 ounces (1 1/2 packages) cream cheese at room temperature
1 tablespoon vanilla
5 cups powdered sugar
3 tablespoons meringue powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon salt
