Carrot Cake Cookies:
1 cup (2 sticks) unsalted butter, room temperature
3/4 cup packed light brown sugar
3/4 cup granulated sugar

1 tsp pure vanilla extract
2 cups all-purpose flour, plus more for flattening cookies
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground ginger
2 cups old-fashioned rolled oats
1 1/2 cups peeled, shredded carrots (about 3 carrots)
1 cup golden raisins
Cream Cheese Frosting (the BEST!):
8oz cream cheese, room temperature
1/2 cup unsalted butter, room temperature
1 cup powdered sugar
1 tsp pure vanilla extract
