½ cup brown sugar
2 large eggs, room temperature
2 teaspoon vanilla extract
2 ½ cups grated carrots ((about six medium carrots))
½ cup chopped pecans ((optional))
1 cup salted butter, softened to room temperature
4 ounces (1/2 block) cream cheese, softened to room temperature
1 pound powdered sugar ((also called confectioners sugar))
2 teaspoons vanilla extract
½ cup chopped pecans
