8 (12 oz.) Ball can or freeze jars
8 lids and rings
1 orange (peel and all), pureed in blender (cut off ends, quarter, remove seeds and white part)
2 cups all-purpose flour
2 tsp. baking powder
1 1/2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 cups granulated sugar
1 1/4 cups vegetable oil
4 large eggs
2 cups carrots, grated
1/2 cup walnuts or pecans, chopped
4 oz. cream cheese, room temperature
2 tbsp. butter, room temperature
tsp. grated orange peel
4 cups confectioners' sugar, sifted
1 tbsp. orange puree
