Carolina Sweet Potato Pie
INGREDIENTS

1/2 cup lard or vegetable shortening, chilled and cut into small pieces 125 mL

1/4 cup ice water 60 mL
•
1 large egg, lightly beaten
•
2 lbs sweet potatoes, peeled and cut into large chunks 1 kg
•
1 cup packed dark brown sugar 250 mL
•
3 tbsp granulated sugar 45 mL
•
1/4 lb butter, softened 125 g
•
1 tsp ground cinnamon 5 mL
•
1/2 tsp salt 2 mL
•
1/4 tsp ground ginger 1 mL
•
1/4 tsp ground nutmeg 1 mL
•
3 large eggs, separated
•
Finely grated zest of 1 small orange
•
1/2 cup freshly squeezed orange juice 125 mL
•
1/2 cup table (18%) cream 125 mL
