Ingredients: 1 1/3 cups sugar; 3/4 cup coconut oil, melted; 3 large eggs, room temperature; 1/4 cup milk; 2 teaspoons vanilla extract; 2 cups all purpose flour; 3 teaspoons baking powder; 1 teaspoon freshly ground cardamom; 1/2 teaspoon powdered ginger; 1/4 teaspoon cinnamon; 1 teaspoon salt; 2 cups shredded carrots; ¾ cup unsweetened, shredded coconut; 1/2 cup granulated sugar; 3 tablespoons butter, room temperature; 1/4 cup heavy cream; 1 recipe for the best cream cheese frosting; 1 teaspoon ground ginger (or 1 2 inch piece of fresh ginger grated!)
